COURSE INFORMATION:
Place of Study: Bruce Hostel Kitchens, Lerwick
Course time: Alternate Fridays over 2 years (18 sessions year one, 12 sessions year two)
For: S3/S4 pupils
COURSE SUMMARY:
This course provides a practical based introduction to hospitality. The focus is on understanding how a professional kitchen and restaurant operates. Pupils will learn about the different jobs and careers in hospitality and begin to develop practical skills and knowledge. Practical experience of working in a realistic working environment is included. During this course pupils will learn a variety of skills including preparing, cooking, presenting and serving food and drinks, and working front of house. The course content places emphasis throughout all units on employability skills and attitudes, which will help to prepare candidates for the workplace. The course will also include some units at Intermediate 2 level.
PROGRESSION:
This course may provide candidates with opportunities to progress to a SVQ in Professional Cookery, a full-time National Certificate course in Hospitality in Further Education colleges on the mainland or suitable training/employment.
