Professional Cookery courses are work-based qualifications designed for chefs who would like to increase their skills and knowledge to a higher level. A range of different levels is available making Professional Cookery ideal for candidates who have just started in the industry, or want to recognise existing skills with a formal qualification.

The Professional Cookery course can form part of a Modern Apprentice programme. You should apply through Train Shetland for these courses. People aged 20 or over, your employer may be able to apply for a Skills Development Grant for Business from HIE Shetland to fund your training. Please contact us for advice on these options.

The Green Badge Tourist Guide qualification is an excellent way to gain employment in Shetland’s growing Tourism industry. With lectures from Shetland’s leading bodies on local history, culture and society this is an excellent course for anyone who would like to know more about the Isles. Training is not only classroom based but also given on tour buses with excursions to local sites of interest. Qualified Tour Guides can be assured a healthy level of employment with our ever increasing cruise ship visits.

We are truly a section which likes to promote Shetland. We strive to use as much locally sourced ingredients in our Hospitality department as possible and share our heritage, culture and traditions through Guiding. If you enjoy preparing, cooking and serving food or learning more about Shetland and becoming a promoter of our Isles then we can help you to achieve the most appropriate qualification.

Look Out For:

SVQ Food and Drink Manufacturing

The college also offers a Scottish Vocational Qualification (SVQ) in Food & Drink Manufacturing. This course is not listed in the prospectus but please contact us for more information if you are interested.

Facilities at a Glance

  • The Hospitality Department facility is modelled on a typical industry kitchen allowing you to practice dishes in the same way as you would in industry
  • A variety of specialist small equipment is available for preparing items such as ice cream, pastry goods and chocolate ribbons
  • Although the department is separate from the rest of the college it is self contained, has a class room nearby and has a dedicated library
