SVQ3 Professional CookeryCOURSE INFORMATION:

Place of Study: Bruce Hostel Kitchens, Lerwick

Mode of Study: Part time

Length of course: Variable, approximately 22 months

Start Date: August 2011

Entry Requirements: SVQ Professional Cookery (Level 2) or at least 2 years experience working as a chef or cook. Employment in a suitable establishment is required. A good level of English and Maths will allow individuals to complete the course more easily.

COURSE CONTENT:

The Professional Cookery course is a work based qualification ideal for chefs who wish to advance their skills and knowledge. The course is ideal for students who have completed the SVQ 2 course. You will spend 1 day a week at college with the remaining time in your workplace where your assessor will visit and assess your work. This qualification is nationally recognised and has been developed in conjunction with the industry to meet their needs. This course can form part of a Modern Apprentice programme.

Units are available individually or in groups for candidates who are interested in specific areas of training.

COURSE SUMMARY:

The qualification requires a total of 16 units, examples include:

  • Establish and develop positive working relationships in hospitality
  • Safety and security of the working environment, maintaining food safety when storing, preparing and cooking
  • Preparing fish for complex dishes,
  • Preparing, cooking and finishing dressings and cold sauces
  • Preparing shellfish for complex dishes
  • Preparing, cooking and finishing complex pastry products

Academic: Successful students will gain a qualification recognised nationally by the industry.
