Professional Cookery (SCQF Level 6) SVQ

What is special about this course?

This Professional Cookery course is a work based qualification ideal for chefs who wish to advance their skills and knowledge and have already completed the SCQF Level 5 course. You will spend one day per week at college with the remaining time spent in your workplace where your assessor will visit and assess your work.

This qualification is nationally recognised and has been developed in conjunction with the industry to meet their needs. This course can form part of a Modern Apprentice programme.

Units are available individually or in groups for candidates who are interested in specific areas of training.

Entry requirements

SVQ Professional Cookery SCQF Level 5 or at least 2 years experience working as a chef or cook. Employment in a suitable establishment is required.

A good level of English and Maths will allow individuals to complete the course more easily.

All applicants will be interviewed.

The qualification requires a total of 16 units, which include:

  • Establishing and developing positive working relationships in hospitality
  • Safety and security of the working environment and maintaining food safety when storing, preparing and cooking
  • Preparing fish for complex dishes
  • Preparing, cooking and finishing dressings and cold sauces
  • Preparing shellfish for complex dishes
  • Preparing, cooking and finishing complex pastry products

How will I study my course?

  • Part Time

You will spend 1 day a week at Shetland UHI, in the new hospitality training kitchen. The remainder of your time will be spent in your workplace.

You will study by a combination of traditional taught classes and practical demonstrations.

Assessors will visit you regularly in your workplace where your skills will be assessed and recorded in your personal portfolio. With regular visits your portfolio will grow until you complete the qualification.

What can I do on completion of my course?

Academic: Successful students will gain a qualification recognised nationally by the industry.

Employment/Career: This course is linked to a work placement where you will be working as a chef.
Excellent employment opportunities exist in all sectors of the industry both locally and nationally, particularly for chefs with advanced skills.

Former students have: Successfully gained employment working in the hospitality industry throughout Shetland and the UK. Some students have achieved their ultimate goal of running their own business.
